Un típico ejemplo de volver hacia atrás con las nuevas versiones.

In Excel 2003, it is possible to drag the fill color menu and make the menu
float. Is that possible in Excel 2007? I have tried but dont know how.

No, the feature to "snap" the colour palette away from the toolbar and
have it floating (and other floating toolbars) was removed when the
Ribbon was introduced in XL2007

Y si no, por un módico precio se puede hacer que Excel 2007/2010 tenga los menús clásicos y también que tenga la barra de relleno de color flotante.
